"Free-tata" Recipe

Breakfast can start to get boring…same old eggs, same toast, every s.i.n.g.l.e. day ….boring!

I like to mix up my meals so that my family and I don’t eat the same thing every day. I have several food allergies and restrictions and it can be difficult to mix it up sometimes.

I recently came across this GLUTEN free, DAIRY free, SOY free, and EGG free breakfast recipe and knew I had to share!

As many of you know I am gluten free, dairy free, soy free, and now egg free … the options are getting pretty limited. More on my food allergies in another blog post … for now let’s get back to this incredible recipe.

Ingredients:

  • 1 Large Organic Yellow Onion Diced

  • 1-2 Cups Organic Baby Spinach Chopped

  • 1 Cup Organic Chickpea Flour

  • 1 Cup Organic Veggie Broth

  • 1 Tablespoon Organic Sunflower Oil

  • 2 Cloves Fresh Pressed Organic Garlic

  • 1 Teaspoon Fresh Minced Organic Rosemary (or 1/4 tsp dried)

  • 1 Teaspoon Fresh Minced Organic Thyme (or 1/4 tsp dried)

  • 1/4 Teaspoon Himalayan Pink Salt

  • 1/8 Teaspoon Crushed Organic Red Pepper Flakes

  • 1/8 Teaspoon Organic Black Pepper

  • 1 Organic Avocado Sliced (Added as a topping after it comes out of the oven)

Directions:

  1. Preheat the oven to 350 degrees F.

  2. Dice the Organic Onion. Heat a few tablespoons of Sunflower Oil in a pot over medium heat and sauté the Onions until golden and caramelized, about 25-35 minutes.

  3. While the onions are cooking, mix the Organic Chickpea Flour, Veggie Broth, Organic Sunflower Oil, Pink Salt & Organic Seasonings together. Use a whisk to make sure there are no lumps in the batter.

  4. When the Onions are just about ready, add the Organic Garlic (& any Veggies) and stir on the stove at low heat for 5 minutes or so.

  5. Add the Onion & Garlic to the Chickpea Flour batter mixing thoroughly.

  6. Oil a pie tray or muffin tin and spread the FREE-tatta batter evenly, smoothing out the top. Bake for 30-40 minutes or until the top is dry and the edges are slightly golden brown and crunchy.

  7. Top with Organic Avocado slices and any sauce of choice.
