Roasted Sweet Potato Recipe | Lean and Green Body Blog


  • 3 medium sweet potatoes
  • 3 tablespoons olive oil
  • 4 large garlic cloves, minced
  • 1/2 teaspoon of pink Himalayan sea salt
  • 1/2 teaspoon of cayenne pepper


  1. Preheat oven to 425 degrees F
  2. Wash and peel sweet potatoes
  3. Cut sweet potatoes into 1 1/2-inch thick rounds
  4. In a large bowl combine the sweet potatoes, olive oil, garlic, sea salt and cayenne pepper
  5. Toss ingredients together, make sure each potato is covered in oil
  6. Spray thin layer of coconut oil on baking sheet, place sweet potatoes on baking sheet (single layer)
  7. Place in oven on middle rack, and bake for 30 minutes.
  8. Enjoy!
